Coconut Pancake

By now you know I have an obsession with pancakes. This one is a regular in my house - I love it. It's easy, delicious and perfect portion size. I make this several ways but this is what I start with. You can add ground flaxseed, whatever your little heart desires.

Ingredients:

  • 3 organic egg whites

  • 1 whole organic egg

  • 1 tbsp of coconut flour

  • 1/4 tsp of coconut oil

  • dash of cinnamon

  • raspberries/blueberries for topping

Directions:

  1. Mix together the egg, whites, flour and cinnamon.

  2. Put the coconut oil in the pan.

  3. Pour pancake batter into pan, cook for a few minutes on each side.

  4. Boil down the raspberries/blueberries or another type of fruit with a dash of water. Use this as your topping for your pancake.
