Blueberry Crumb Protein Pancakes

You know those days you wake up and just want some pancakes? That was what happened. I didn't want just regular pancakes. I wanted blueberry pancakes. So I created this recipe and it turned out BOMB.

Pancake Ingredients:

  • 1 cup of organic egg whites

  • ¼ cup of unsweetened almond/coconut milk

  • 1 small banana mashed (I used 63 grams of mashed banana)

  • 1 tsp of organic vanilla extract

  • ½ tsp of baking powder

  • 1 scoop of doTERRA v-shake (or I also use Sunwarrior Vanilla)

  • Handful of blueberries (I used 80 grams)

Topping:

  • 1 tbsp of Coconut Flour

  • 2 tbsp of unsweetened almond/coconut milk

  • 1-2 packets or 2-4 drops of stevia

  • Additional blueberries if desired

Directions:

  1. Mix the pancake ingredients together and add blueberries last. I used a griddle and made small batches of pancakes with the batter.

  2. For the topping, mix the ingredients and it should be crumbly.

  3. Put additional blueberries on top with the topping. Enjoy! Feel free to add organic pure maple syrup or boil down fruit to put on top.

*Note: I created this recipe on the fly, so if the batter is dry, add more milk and if it needs more liquid, add more banana or protein powder.
