Pumpkin Coconut Pancakes
I posted a picture of these pancakes I made on Facebook and everyone went crazy asking for the recipe. So here it is my loves:
Pumpkin Coconut Pancakes:
1 tsp of Psyllium Husk
1 tbsp of Coconut Flour (I use Bob's Red Mill)
1 scoop of doTERRA V-shake Powder
1/4 tsp of Cinnamon (I use a lot but go with what you prefer)
1/4 tsp of Pumpkin Spice (optional)
1/2 tsp of Organic Vanilla Extract
1/3 Cup of Organic Pumpkin Puree (NOT pie filling)
1/3 + 1/4 cup of Organic Egg Whites
I choose to make 4-5 small pancakes with this recipe because they look cute, haha. Enjoy!
Toppings:
Option 1:
1/2 cup of cooked down mixed fruit - I buy a big bag of Organic mixed fruit from Costco and it's not only a money saver but saves me from making multiple trips to the store.
Option 2:
1/2 package of Sambazon Acai Smoothie Pack (I buy Unsweetened)
Dash of Coconut Water
A few berries of your choice (to sweeten + thicken)
Dash of Stevia (optional)
