Fish Less Tuna Salad
I use to eat Tuna Fish (White Albacore in Water) all the time and really enjoyed it. After reading about mercury issues increasing with Tuna and I honestly did not feel good after eating it, I thought I’d try to make my own healthier version.
Ingredients:
1.5 cups of Pumpkin Seeds – Soaked overnight (This is key!)
2.5 tbsp of lemon juice – Fresh is better but use what you have
Dash of sea salt, to taste
Fresh black pepper, to taste
1 stalk of organic celery
1 organic tomato
1 garlic clove, chopped up
2 organic pickles or fresh dill would work if you don’t like pickles
1/4 cup onions and/or scallions
1/2 avocado
Directions:
After soaking the sunflower seeds overnight, rinse them well, then put in a food processor or a blender will also work. The seeds should have a chunky consistency similar to actual tuna.
Scoop out the sunflower seeds into a bowl. Add the lemon juice, sea salt, black pepper, celery, tomato, garlic, pickles and onions.
Mix the avocado thoroughly or you can mash it in so its creamy…enjoy!
Keep in mind, I love vegetables, so the more the better for me. You can personalize this any way and add less or change some of the ingredients.
I was actually surprised at how delicious this turned out and while I did notice a slight difference from real tuna, this is my new favorite thing! I loved it!
